Freezers are sold by rated cubic feet, but you buy them to hold pounds — and how many pounds a cubic foot holds depends on the freezer, the cut, and how you wrapped it.

Quality months are not safety months. Food held at a steady 0°F stays safe indefinitely — the figures above are when it starts tasting like the freezer. Ground meat and fatty fish go off in flavour first, which is why they should be the things you eat down before the next harvest arrives.

How this calculation works

Two different conversions run side by side. The table shows what the food itself occupies, from a bulk density per category — ground meat frozen flat packs at about 40 lb per cubic foot, a whole chicken at 25, and bread at 15. That is the honest picture of where your space goes, and it is why the bread nobody thinks about takes more room than the beef everybody plans for.

The headline number works differently. Rated capacity comes from dividing total pounds by a pounds-per-rated-cubic-foot figure for the freezer type, then adding headroom. That figure already contains the packing loss, the shelving, and the space you cannot use, so the two numbers are deliberately not the same. Extension guidance uses roughly 35–40 lb per rated cubic foot for a chest and 30 for an upright.

A 7 ft³ upright is not a 7 ft³ chest

Both are honestly rated. They contain the same volume of air. But an upright spends a fifth of that volume on shelves, door bins and the evaporator housing behind the back wall, and you cannot store meat in a shelf. University of Minnesota Extension puts the same 142 lb of food in either 4.5 ft³ of chest or 5.5 ft³ of upright — a 22% penalty for the convenience.

The penalty is not an argument against uprights. It is an argument against buying the same number of cubic feet in one as you would in the other. If you have priced a 14 ft³ chest and are considering an upright instead, the equivalent is 17 ft³, and that changes the comparison.

Against that, uprights win on the thing that actually loses food: you can see what is in them. The classic chest freezer failure is a layer of last year's harvest at the bottom, under this year's, discovered in three years. If organisation is not your strength, the more efficient freezer may be the one that wastes less.

The half-empty freezer is the expensive one

This is the counterintuitive part, and it runs against how people buy. A freezer at 40% full costs almost exactly as much to run as the same freezer full — the compressor is cooling a fixed volume of insulated space either way. What changes is what you get for the money.

Frozen food is thermal mass. A full chest freezer holds safe temperature for around 48 hours with the lid shut and the power off; a quarter-full one loses it in well under a day. Every empty cubic foot is one you pay to cool and get no storage and no outage protection from.

Which leads to the practical rule: buy for what you will actually put up next year, not for the homestead you plan to have in five, and fill the slack with jugs of water until you grow into it. Water is free, it freezes into thermal mass, and you can pull jugs out as real food displaces them. Two smaller freezers also beat one large one for the same reason — you can empty one in spring and switch it off entirely for the lean months.

Where the frost-free freezer loses you food

Auto-defrost is why food burns faster in the kitchen freezer than in the chest in the garage. The mechanism is a heater that runs periodically to clear the evaporator coil, cycling the compartment several degrees warmer and back. Each cycle drives a little moisture out of the food and onto the coil — which is exactly what freezer burn is.

A manual-defrost chest holds a genuinely steady temperature and does not do this. The trade is that you defrost it yourself once a year. For a household putting up a harvest rather than storing a week of convenience food, that trade is heavily one-sided, and it is the real reason the quality-life figures in the table are achievable in a chest and optimistic in the fridge freezer.

Two things matter more than the appliance, though. Wrapping — air against the food is what burns it, so vacuum sealing roughly doubles quality life over butcher paper. And temperature: the 0°F figure is not conservative, it is the number the quality months are measured at. A freezer running at 10°F because it is in an unheated garage in July is quietly halving everything in the table.

What this calculator can't tell you

Densities assume you pack deliberately — meat frozen flat and stacked, berries frozen on a tray then bagged, air pressed out. Food thrown in loose in supermarket trays can take half again as much room. If your freezer habits are casual, add 25% and you will be closer.

Running cost is an estimate from typical annual consumption per cubic foot, and the single largest variable is where the freezer stands. A chest in an unheated garage in a hot climate can use half again what the label claims, because the compressor is fighting ambient heat. A basement is the cheapest place to run one.

The bigger thing this cannot weigh is whether freezing is the right method at all. A freezer is the only preservation method with a running cost and a single point of failure — one long outage and the whole harvest is at risk at once. Canned and cellared food has neither property. Most homesteads end up splitting the harvest across all three deliberately, and that is a resilience decision rather than a capacity one.

Where the freezer fits

Freezing, cellaring and dry storage divide the year between them. Fresh roots and squash belong in a root cellar at no running cost at all; grain, beans and oil belong in the dry pantry; the freezer takes what neither can hold — meat, berries, blanched greens.
